A rich, velvety Mexican hot chocolate made effortlessly in a slow cooker. This comforting winter drink blends cocoa, milk, cream, cinnamon, and a hint of chili for a complex, soothing flavor.

Ingredients

Scale
  • 1/2 cup unsweetened cocoa powder (Dutch-process recommended)
  • 4 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground chili powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Add cocoa powder, sugar, cinnamon, chili powder, and salt to the slow cooker. Whisk to distribute spices evenly.
  2. Pour in whole milk and heavy cream. Whisk thoroughly until the cocoa powder is fully dissolved.
  3. Place the lid on the slow cooker and set to low heat. Cook for 2 to 3 hours.
  4. Stir occasionally, about every hour, to help flavors meld.
  5. Once hot and fragrant, turn off the slow cooker and stir in the vanilla extract.
  6. Ladle into mugs and serve immediately with desired toppings.

Notes

Do not cook on high heat as it may scorch the milk. For a thicker consistency, reduce milk by half a cup or add a cornstarch slurry. Leftovers can be refrigerated for up to 3 days; reheat gently on the stove. Do not freeze as texture may become grainy.
