A comforting, easy-to-make slow cooker chicken noodle soup that requires minimal prep time. This recipe features tender shredded chicken, soft vegetables, and egg noodles in a rich, savory broth, perfect for busy weeknights.

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 3 medium carrots, peeled and diced into half-inch chunks
  • 3 stalks celery, diced
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon dried rosemary
  • 2 dried bay leaves
  • 2 cups wide egg noodles
  • 1 tablespoon unsalted butter
  • ½ cup heavy cream (optional)
  • Salt and black pepper to taste

Instructions

  1. Sauté the onions, carrots, and celery in butter in a skillet over medium heat for 5 minutes until softened (optional but recommended).
  2. Transfer the sautéed veggies (or raw veggies) to the slow cooker insert. Add minced garlic, dried thyme, parsley, rosemary, and bay leaves. Stir to combine.
  3. Place the chicken on top of the vegetable mixture. Pour in the chicken broth, ensuring the chicken is mostly submerged.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is tender.
  5. Remove the chicken from the pot and shred it into bite-sized pieces using two forks.
  6. Return the shredded chicken to the slow cooker and stir to distribute.
  7. Cook the egg noodles separately according to package directions (usually 6-8 minutes). Drain them.
  8. Stir the cooked noodles into the soup. If using heavy cream, stir it in now.
  9. Taste the broth and add salt and pepper as needed.
  10. Ladle into bowls and serve immediately, garnished with fresh parsley if desired.

Notes

Cook noodles separately to prevent them from becoming mushy. If you want a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the pot during the last 30 minutes of cooking. Always taste for salt at the end as broth sodium levels vary.
