  • ¼ cup fresh lime juice (from 23 limes)

Instructions

  1. Prep the watermelon: Cut the watermelon in half crosswise. Place one half cut-side down and slice off the rind in strips. Cube the flesh into 1-inch pieces and place in a large mixing bowl. Remove any visible seeds.
  2. Slice the red onion: Peel the onion, cut in half through the root end, and slice into thin half-moons (about ⅛-inch thick).
  3. Make the lime-onion mixture: Add the sliced red onion to the bowl with the watermelon. Squeeze lime juice over the top and toss gently. Let sit for 10 minutes at room temperature.
