A quick and easy summer salad featuring warm, smoky grilled peaches paired with cool, creamy burrata, peppery arugula, and a sweet-tangy balsamic glaze. Perfect for a weeknight dinner or a show-stopping side.

  • 3 large firm-ripe peaches
  • 8 oz (225g) ball burrata cheese
  • 4 cups (120g) fresh arugula
  • 1/4 cup loosely packed fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • Flaky sea salt (like Maldon) and freshly cracked black pepper
  • 1/2 cup (120ml) good balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Make the Balsamic Glaze: In a small saucepan, combine balsamic vinegar and honey. Bring to a gentle simmer over medium heat, then reduce heat to low. Let bubble gently for 8-10 minutes, stirring occasionally, until reduced by half and syrupy (coats the back of a spoon). Set aside to cool.
  2. Preheat your grill, grill pan, or cast-iron skillet over medium-high heat until ripping hot. Brush grates or pan with a little neutral oil (like avocado or grapeseed) to prevent sticking.
  3. Prep the Peaches: Wash peaches, cut in half along the natural seam, twist to separate, and remove the pit. Lightly brush the cut sides with olive oil.
  4. Grill the Peaches: Place peaches cut-side down on the hot grill. Cook undisturbed for 3-4 minutes until deep grill marks appear and peaches have softened slightly. Flip and grill for another 1-2 minutes on the skin side. Remove and set aside.
  5. Assemble the Salad: Spread arugula on a large serving platter. Tear burrata into large pieces and nestle among the greens. Arrange warm grilled peach halves on top.
  6. Finish and Serve: Tear fresh basil leaves over the top. Drizzle generously with extra-virgin olive oil and balsamic glaze. Finish with a generous pinch of flaky sea salt and a few cracks of black pepper. Serve immediately.

Notes

Use firm-ripe peaches to prevent them from falling apart on the grill. Take burrata out of the fridge 20 minutes before serving for best creaminess. Season each layer (arugula, peaches) for maximum flavor. If using store-bought balsamic glaze, adjust sweetness/tartness with a splash of vinegar or honey.
