  • 4 large Russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 1 ½ cups shredded sharp cheddar cheese
  • 6 strips cooked bacon, crumbled
  • ½ cup sour cream
  • 4 green onions, sliced
  • Salt and black pepper to taste
  • Optional toppings: jalapeño slices, diced tomatoes, hot sauce, ranch dressing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes clean and pat dry. Prick each several times with a fork.
  3. Bake whole potatoes directly on oven rack for 50-60 minutes until tender.
  4. Let potatoes cool for 10 minutes.
  5. Cut each potato in half lengthwise. Trim ends into a slight point to create a football shape.
  6. Scoop out flesh, leaving a ¼-inch (6mm) layer attached to the skin.
  7. Brush skins inside and out with melted butter. Season lightly with salt and pepper.
  8. Place skins skin-side up on a baking sheet (or on a cooling rack set inside the sheet). Bake for 10 minutes, then flip and bake another 8-10 minutes until golden and crisp.
  9. Fill skins with shredded cheddar and crumbled bacon. Return to oven for 3-5 minutes until cheese is melted and bubbly.
  10. Remove from oven, let cool 2 minutes. Top with sour cream and green onions. Serve immediately.

Notes

For maximum crispiness, use a cooling rack during the second bake. Don’t over-scoop—leave a ¼-inch layer of potato for structure. Butter is better than oil for crisping. Potatoes can be baked, scooped, and shaped up to 24 hours ahead.
