A smooth, rich cold brew topped with a cloud of spiced pumpkin cream that tastes like fall in a glass. This copycat recipe is quick, easy, and uses simple ingredients to recreate the iconic Starbucks drink at home.

Ingredients

Scale
  • 1 ½ cups (12 oz) cold brew coffee
  • ¼ cup heavy cream
  • 2 tablespoons milk (whole or 2%)
  • 1 tablespoon pumpkin purée (100% pumpkin, not pie filling)
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • Pinch of salt
  • Ice cubes

Instructions

  1. In a small mixing bowl, combine heavy cream, milk, pumpkin purée, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. Whisk until smooth and fully incorporated.
  2. Whisk vigorously for 1-2 minutes (or use a handheld frother for 30 seconds) until the mixture thickens slightly and becomes frothy. It should coat the back of a spoon but still be pourable.
  3. Fill a glass or mason jar with ice cubes.
  4. Pour cold brew coffee over the ice, leaving about an inch of space at the top.
  5. Slowly pour the pumpkin cream over the back of a spoon held just above the coffee to create a floating layer.
  6. Enjoy immediately. Stir gently if desired, or sip from the top to taste the cream first.

Notes

For best results, use cold heavy cream. Don’t overwhip the cream—it should be pourable, not stiff. The pumpkin cream can be stored in an airtight container in the fridge for up to 3 days; whisk or froth again before using. For a dairy-free version, substitute full-fat coconut cream and almond milk. For extra spice, add an additional ¼ teaspoon pumpkin pie spice and a pinch of cayenne.
