This easy homemade pumpkin spice syrup for coffee is simple, budget-friendly, and tastes infinitely better than anything you can buy at the store. It turns an ordinary cup of coffee into a cozy seasonal treat without the fuss.

  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 tablespoons pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Combine the sugars and water. In a small saucepan, add the water, granulated sugar, and packed brown sugar. Place over medium heat and whisk gently until the sugars are mostly dissolved, about 2 to 3 minutes.
  2. Whisk in the pumpkin and spices. Once the sugar is dissolved, add the pumpkin puree, pumpkin pie spice, ground cinnamon, and the pinch of salt. Whisk until the pumpkin is fully incorporated, about 1 minute.
  3. Bring to a gentle simmer. Turn the heat up to medium-high and bring the mixture to a gentle simmer. Once simmering, reduce the heat to low. Let it cook for 5 to 7 minutes, whisking occasionally, until the syrup thickens slightly and the color deepens.
  4. Remove from heat and add vanilla. Take the saucepan off the burner and stir in the vanilla extract. Let it sit for about 2 minutes to cool slightly.
  5. Strain (optional but recommended). Pour the syrup through a fine-mesh strainer into a glass jar to remove any pumpkin fibers.
  6. Cool and store. Let the syrup cool to room temperature before sealing the jar. Store in the refrigerator.

Notes

Do not boil the syrup too hard; a gentle simmer is all you need. If the syrup seems too thin after simmering, let it cook for an extra minute or two. If too thick, add a tablespoon of water. The flavor deepens after a day or two in the fridge. For a sugar-free version, swap the sugars for monk fruit sweetener or allulose.
