  • ½ teaspoon onion powder
  • ¼ cup freshly grated Parmesan cheese
  • ¼ teaspoon freshly cracked black pepper
  • ⅛ teaspoon cayenne pepper (optional)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Rinse pumpkin seeds in a colander under cold water, removing large pieces of pulp.
  3. Transfer seeds to a small saucepan, cover with water by 1 inch, and add 1 teaspoon salt. Bring to a boil, then simmer for exactly 10 minutes.
  4. Drain seeds and spread on a clean kitchen towel or paper towels. Pat very dry; let sit for 5 minutes.
  5. In a medium bowl, combine melted butter, garlic powder, onion powder, Parmesan, black pepper, and cayenne (if using). Stir into a paste.
