This creamy German beer cheese pretzel dip is warm, cheesy, tangy, and completely irresistible. It comes together in under 30 minutes with simple ingredients and is perfect for game day or any gathering.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup German beer (dunkel or hefeweizen recommended)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Soft pretzels for serving
  • Additional mustard for serving (optional)

Instructions

  1. Shred the cheddar cheese using the large holes of a box grater. Let it sit at room temperature while you prepare everything else.
  2. Soften the cream cheese if needed (microwave in 10-second bursts until spreadable but not melted).
  3. In a medium saucepan over medium heat, melt the butter. Once bubbling, add the flour and whisk constantly for about 1 minute to make a roux.
  4. Pour in the beer slowly while whisking continuously. Keep whisking until the mixture is smooth and starts to thicken, about 2-3 minutes.
  5. Reduce the heat to low. Add the softened cream cheese in spoonfuls, whisking until each addition is fully incorporated.
  6. Gradually add the shredded cheddar, a handful at a time, stirring gently with a wooden spoon or spatula until each handful is completely melted before adding more (about 3-4 minutes total).
  7. Stir in the Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, salt, pepper, and cayenne if using. Taste and adjust seasoning.
  8. Serve immediately with warm soft pretzels or pretzel bites.

Notes

Low heat is crucial to prevent the cheese from becoming grainy. Shred your own cheese for best results. Let ingredients come to room temperature before starting. The dip thickens as it cools; reheat with a splash of beer or milk if needed. For a non-alcoholic version, use non-alcoholic malt beverage or beef broth with a splash of apple cider vinegar.
