Instructions

  1. Brown the butter: Cut butter into pieces and melt in a light-colored saucepan over medium heat, stirring frequently. After 5-7 minutes, the butter will foam and bubble. When the milk solids turn golden-brown and the butter smells nutty, remove from heat. Pour into a heat-safe bowl and let cool for 10-15 minutes.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, cream of tartar, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
  3. Cream butter and sugars: In a large bowl, combine cooled browned butter with granulated sugar and brown sugar. Beat with an electric mixer on medium speed for about 2 minutes until smooth. Add pumpkin puree, egg, and vanilla extract. Beat on medium-low until fully combined.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix. The dough will be soft and slightly sticky. Cover and refrigerate for at least 30 minutes.
  5. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
