  • 1/3 cup honey
  • 1/2 cup mini chocolate chips
  • 1/4 cup ground flaxseed (optional)

  • 1/4 teaspoon sea salt

Instructions

  1. Combine the dry ingredients. In a large mixing bowl, add 1 cup old-fashioned rolled oats, 1/4 cup ground flaxseed (if using), and 1/4 teaspoon sea salt. Stir them together with a spatula until evenly distributed.
  2. Add the wet ingredients. Spoon in 1/2 cup creamy peanut butter, 1/3 cup honey, and 1/2 teaspoon vanilla extract. Use your spatula to fold everything together, pressing down to incorporate the peanut butter into the oats. Stir for about 1-2 minutes until a cohesive dough forms.
  3. Fold in the chocolate chips. Add 1/2 cup mini chocolate chips and stir until evenly distributed. The dough should be thick, slightly sticky, and hold together when pressed. If too dry, add a teaspoon of honey or a splash of milk. If too sticky, add a tablespoon of oats.
  4. Chill the mixture (optional but recommended). Cover the bowl and refrigerate for 15-20 minutes to firm up the dough for easier rolling.
  5. Roll into balls. Scoop out about 1 tablespoon of the mixture and roll between your palms into a smooth ball. Place each ball on a baking sheet or plate lined with parchment paper. You should get about 15-18 balls.
  6. Chill to set. Transfer the baking sheet to the refrigerator and let the energy balls chill for at least 30 minutes to firm up and hold their shape.
  7. Enjoy! Once chilled, they are ready to eat. Store leftovers in an airtight container in the fridge for up to a week, or freeze for up to three months.
